I did well with last week’s menu, but made a couple of last-minute changes. Therefore, I’m carrying over a few meals that got nixed last week. This might be our most hectic week of the season so I’m counting on my menu to really help me. My slow cooker will be my reliable sidekick and I chose a few things I know will have a good amount of leftovers for us to rely on. Here we go!
Breakfasts
Oatmeal with dried cherries, bananas, fresh-squeezed orange juice x 2
Cowboy sandwich, banana/strawberry/pineapple smoothies
Baked cinnamon and apple french toast, berries(because I still have half-and-half to use…how tragic:), hot cider x 2
Breakfast burritos (filled with skillet potatoes, bell peppers, onions, breakfast sausage and cheese), orange juice
Glazed cinnamon scones with cinnamon chips, fruit, hot cider
Lunches
Leftovers x 3 plus fruit
Chicken salad sandwiches, fruit salad, yogurt
Texas toast grilled cheese, tomato basil soup
Peanut butter and freezer strawberry jam, apple slices, milk
Lunch out (Mommy-Daughter Christmas Shopping Day)
Dinners
Chicken spaghetti casserole, salad, garlic bread
Potato cheese soup, rolls
Herbed slow cooker chicken, creamy rice, asparagus
Pot roast, carrots, potatoes, green beans
Dinner with Daddy (I’ll be out two nights this week so one night will be a special dinner out with daddy for Annalise)
Leftovers Night x 2
Snacks
Pears, bananas, apples, grapes
Hummus and multi-grain crackers
Carrots, celery, broccoli, dip
Pumpkin chocolate chip muffins (from the freezer), hot cider
Freezer Cooking (I’m splitting up my freezer cooking this week. I only have time for two or three freezer cooking items this week, but that’s better than nothing!)
Shredded chicken
Homemade pizza pockets
Applesauce/pearsauce
I didn’t put anything very holiday-ish on the menu, but I hope to get to that next week. What about you? Do you make specific holiday menu plans for the month of December?

Oooo, it is my idea of heaven. Basically, grilled buttered Texas Toast bread, slice of breakfast sausage, egg, cheese…then you slap it back onto the pan and grilled it all again. Are you disgusted?
