I need a muffin like I need a hole in my head.
But these were calling to me because I had cinnamon chips in my pantry. See? I had to.
A few months back, I purchased cinnamon chips from Prepared Pantry. Yum. They are morsels of heaven if you’re a cinnamon fan like me. Just as the bag says, use them in muffins, breads, cookies…whatever your cinnamon-lovin’ heart desires!
I might have added them to a latte one cold February morn.
Today I realized I had no buttermilk. Never fear! Just add a tablespoon of lemon juice to a measuring cup…
and fill with milk to juuuust under the 1 cup mark. Let it sit for 5 minutes and it is ready to go.
Whisk 2 eggs together and add buttermilk and vanilla. Set aside.
Mix flour, oats, sugar, baking powder, baking soda, salt, and cinnamon together.
Make a well in the center of the mix and pour the egg mix in. Fold together until just mixed. Do not over mix. Repeat: Do Not Over Mix.
Fold in the delicious cinnamon chips.
Mix 2 tablespoons of sugar with a teaspoon of cinnamon.
And fill greased muffin pans. Sprinkle the cinnamon sugar mix on top and place in the oven. Turn the oven down to 375 degrees. Bake for 15-20 minutes. My recommendation is to be diligent about checking on these sweet muffins. Just a couple of minutes too long and they’ll dry out on you.
Cool them on a wire rack….but not for too long or your butter won’t melt like my munchie likes hers to…with a few chips sprinkled for good luck.
Cinnamon Chip Muffins (adapted from Prepared Pantry)
Ingredients
- 2 eggs
- 1 cup plus 1 tablespoon buttermilk
- 2 teaspoons vanilla
- 2 cups flour
- 1/3 cup oats (I use Quaker Old-Fashioned)
- 1 cup sugar (I use turbinado sugar)
- 1/2 teaspoon baking soda
- 1/2 tablespoon baking powder
- 1/2 teaspoon salt
- 1.5 teaspoon cinnamon (you might cut back to 1..I LOVE cinnamon)
- 1 cup cinnamon chips (I highly recommend Prepared Pantry chips)
Cinnamon sugar topping:
- 2 tablespoons granulated sugar
- 1/2 teaspoon cinnamon
Preheat oven to 425 degrees and grease a muffin pan. Whisk the eggs together then add the buttermilk and vanilla. Set aside. In another bowl, mix the flour, oats, sugar, baking soda, baking powder, salt, and cinnamon together. Dig a little well in the dry ingredients and pour egg/buttermilk mix into the well. Fold together gently just until combined. Mix in the cinnamon chips being careful not to over mix the batter. Pour the batter into the greased muffin cups. Mix the two tablespoons sugar and 1/2 teaspoon cinnamon together. Sprinkle over the muffins. Put in the oven and immediately turn the temperature down to 375 degrees. Bake for 15 minutes or until done. Baking times will vary depending on how well your oven holds heat.

I don’t know why I haven’t been stocking (laugh away, dear dear friend:) cinnamon chips for years. They’re such a treat!

They’re good–but do NOT overbake them! Much better if you don’t go, “hmm, think they need a few more minutes.”
