I love how every day is a holiday these days. It feels like anyone can just declare a day National Clip Your Kid’s Toenails Day or National Clean Your Oven Month.
And you better believe I like that April is National Grilled Cheese Month and today (ahhh) is National Grilled Cheese Day. Can I get a Cheese Please!
I saw this over at Two Peas & Their Pod yesterday and had to make it today. Love those Peas. How convenient that Munchie has preschool this afternoon. I got to indulge and savor every bite all alone. That sounds weird.
This was good. Very good. A nice twist on good ol’ grilled cheese. I used French bread instead of ciabatta, but I think I’ll definitely try ciabatta next time.
Happy Cheesy Sandwich Day!
Parmesan Crusted Pesto Grilled Cheese Sandwich
Check out the simple, but delicious recipe over at Two Peas & Their Pod. Thank you!

Seriously, you are killing me. I’m starving right now and I’m going to make 20 of these when I get home. I can feel the heart attack a’coming.
You’ll need 20. My sandwich was a little on the small side–my belly prefers more. Eat up, Doc!
Yum. I wonder how it will taste on sourdough?
Your sourdough-lovin’ self
I think it’d be delicious. Try it. Do it. Tell me.
Good grief and Ive already started my diet:-( well maybe tomorrow…
I know…I knoooooow. I couldn’t help it. I had to!
oh my goodness! that looks amazing! i love how the cheese is just oozing out. yum!
haha! I do love oozing cheese, too.
This looks soooo good! That reminds me, Food Network Mag had an insert in last month’s issue: 50 grilled cheese sandwiches. To die for.
If we eat a grilled-cheese-a-day, we can say we’re fighting osteoporosis. Right?
AHahahaha! But yes. Yes, we can. And we should start fighting it now…in our 30s. Early.
