The pizza dough. Ready and waiting.
This week is all about lunches for MSM’s 4 Weeks to Fill Your Freezer challenge. I thought I’d swap out some of the suggested lunch recipes for a few of my own, but today I decided to make the pizza pockets–I’m so glad I did! Now I’m thinking I’ll make the suggested ham and cheese pockets, too. Hey, I love a recipe that includes “dough.”
I sautéed ground beef, mushrooms, green bell pepper, and onion. After it was all cooked, I added some spaghetti sauce and let it warm up.
I rolled the pizza dough into 18 balls.
Then I rolled out each ball into a circle, topped it with the beef mixture and mozzarella cheese.
Then I folded them over and pinched/sealed them shut. They’re not too darn purrrty, but purrrty isn’t essential in my kitchen.
Here’s Munchie Girl (with requisite Unbrushed Friday Hair) working on her own pizza pocket. She rolled out her own dough, filled it up, and sealed it shut. Such a good little chef.
I popped them in a 500 degree oven and let them cook for about 12 minutes until just browning. Once cooled, I’ll pack them up and toss them in the freezer. Then I can just reheat them in the oven or toaster oven for easy lunches. Love that! Since Munchie Girl and I were dining alone tonight, we had them for dinner with a little sparkling apple-cranberry Martinelli’s. We felt fancy.
I love this recipe and will keep it in our rotation. The filling possibilities seem endless and I’m eager to try a breakfast pocket version. I’ll let you know how that goes!















Yum! These look 5,000X better than those frozen pizza pockets that — ahem — some people buy at the grocery store. I am adding it to the ever-growing to-do list.

I learned the harder way and we had much crispier top crusts last night.
